Valentine’s Day Treats and Family Time

It’s March Madness month!  I am determined to beat the madness and chaos and make an effort to post more.  The kids and I have been busy, busy in the kitchen so we have loads of pictures and recipes to put up.  In other words, no excuses!

We are really starting to enjoy summer here.  A few weeks ago we hauled ourselves to the beach for an afternoon of pizza and sandcastle building.  Our sandcastle turned into a sand – race – car… we were quite proud of it, really!  And the icing on the cake was later when we were eating pizza up on the bank and watching the sunset – we witnessed grown adults sitting in our car and taking selfies with it!  Made our day, hahaha.

20170130_19141520170130_191811 Valentine’s Day came and went fairly quickly.  We learned some really interesting information about the history of Valentine’s Day – quite morbid in fact… must say it made Master 9 enjoy the holiday a bit more as he is still at the “ewwww…girls/love/romance” stage in his life.  If you are interested you can find out more here.

We also made the most gorgeous cards.  They were made entirely of cut out hearts and could be used for an any day fun craft with kids – Heart Shaped Animal Cards.

A sweet treat was needed and I didn’t want to go shopping!  I had leftover chocolate melts and a tin of sweetened condensed milk leftover from Christmas baking so I headed to Pinterest to see what I could find.  Boy I wasn’t let down… you must make this.  The Ultimate Millionaire’s Shortbread is absolutely delicious, gooey, and extremely rich.  There is a little bit of work involved (especially when it comes to the caramel layer) but it is definitely worth it.

Valentine’s Day is also a special time for my hubby and I as it marks the anniversary of our first date.  So that week we made an effort to have a family dinner out with the children.  The food was as delicious as it appears in the photo and the kids enjoyed a special date night with Mom and Dad.  As much as we love our “just the two of us” date nights there’s something extra special about taking the kids out to celebrate, too.
