Its bean at least a year since I wrote a blog. A lot has happened since then. I turned 10 four months ago. It’s bean a blast at the age of 10.
I’m now a basketball player. My team name is the Edmonton Lakers.
In school, I’m now learning geometry and pre-algebra. It’s tough, but I am really enjoying it. Math is my favorite subject.
Today I made Holiday Spiced Caramel Snickerdoodle Muffins with Little Miss 3 and my Mom. We also went out side in the rain to clean up the yard. When we came inside, we played board games and watched Moana. I think the rest of 2017 will be great.
Holiday Spiced Caramel Snickerdoodle Muffins
Ingredients:
1 cup butter
1 cup brown sugar
1 Tbsp vanilla
2 eggs
2 cups flour
2 tsp baking powder
pinch of salt
1 Tsp cinnamon
1 cup milk
Topping:
1/4 white sugar
1 Tbsp cinnamon
Method:
Cream together the butter and brown sugar. Add in eggs, one at a time, and mix well. Mix in vanilla and set aside.
In a separate bowl, stir together the flour, baking powder, salt and cinnamon.
Alternately, stir in a scoop of the flour mixture/milk into the creamed butter mixture.
Once fully combined, fill muffin cases in a muffin tin 2/3 way up.
To top each muffin, stir together the white sugar and cinnamon. Sprinkle a teaspoonful over each muffin.
Place in the oven for approximately 15 minutes, until risen and golden.
Remove from muffin tin and let cool.
